چکیده

Although progress has been made in regard to pathogen reduction technologies, the incidence and retardation of pathogens in the meat supply remains a high priority. As examples, on October 7, 2002, the Food Safety and Inspection Service (FSIS) issued a notice in the Federal Register mandating HACCP reassessments for E. coli O157:H7 and indicated that testing exemptions would furthermore be revoked. As promised, and due to the “E. coli summer season,” on April 18, 2003, the FSIS issued Notice 11-03 indicating that the FSIS will begin sampling raw ground products for E. coli O157:H7 at all grinding facilities, regardless if an establishment was previously exempt from routine sampling, in effect removing all exemptions. To this end, inplant inspectors will receive sampling request forms and draw samples regardless of the plants own testing program.

Avian hosts constitute a natural reservoir for thermophilic Campylobacter species, primarily Campylobacter jejuni and Campylobacter coli, and poultry flocks are frequently colonized in the intestinal tract with high numbers of the organisms. Prevalence rates in poultry, especially in slaughter-age broiler flocks, could reach as high as 100% on some farms. Despite the extensive colonization, Cam...

Quantifying the robustness of a broth-based model for predicting Listeria monocytogenes growth in meat and poultry products.

Given the importance of Listeria monocytogenes as a risk factor in meat and poultry products, there is a need to evaluate the relative robustness of predictive growth models applied to meat products. The U.S. Department of Agriculture-Agricultural Research Service Pathogen Modeling Program is a tool widely used by the food industry to estimate pathogen growth, survival, and inactivation in food...

The importance of Campylobacter jejuni to the meat industry: a review.

Campylobacter jejuni is a microorganism that only recently has been implicated in gastroenteritis in humans. As appropriate methods used for detection of the bacterium have been developed, the rates of illness caused by the pathogen were found to approach or surpass those attributed to Salmonella. Substantial evidence has been gathered to document that the route for human infection is through t...
